A flue deflector is built in, and the millivolt system does not require an electrical hookup. In the tank, there is a large cold zone where food particles collect instead of sitting in the cooking area, where the oil would take on a burnt flavor and have a shorter life. When ready to clean out the sediment, employees can use the 11⁄4-inch full-port, ball-type drain valve.
For durability in commercial settings, this Vulcan LG500 gas fryer has a galvanized, corrosion-resistant back and sides with stainless steel components. A liner on the reinforced door increases its stability and strength.
