This 23mm is a very unique casing because it is made using plant products only. You may use on any sausage be it vegetarian, poultry, beef, sheep or pork. The casing are best for fresh sausages. You can cook or smoke if you lay on racks as I sometimes have a problem with them dropping in the smokehouse if the humidity is high. Very, very tender casing any way you use it.
