Our honey is extracted from the comb without the use of heat and heavy processing. It is strained through a stainless steel strainer to remove most of the visible pieces of wax, propolis, and pollen. This does not remove the small grains of wax, propolis, and pollen maintaining the fresh from the hive taste.
Raw honey does tend to crystallize more quickly than highly processed honey because it has not been heavily filtered removing all the particles that tend to cause crystallization. It is also not pasteurized (heated to high temperatures), a process which tends to extend the period of time honey will remain uncrystalized.
If your honey crystalizes, simply place in a pan of warm water on your stove. Lower temperatures will require more time to decrystalize honey. Do not microwave honey to decrystalize it as it will cause hot spots potentially burning the honey and damaging the container.
