Nakiryu: Michelin Star Spicy Ramen
Nakiryu (創作麺工房 鳴龍) and their spicy ramen (tantanmen) achieved Michelin star fame in 2017. 

Restaurant Details
There are only a handful of ramen shops in Tokyo that have ever held a Michelin star, so you know that Nakiryu must be something special. Located near Otsuka Station in north Tokyo, this ultra-popular ramen-ya is famous for their tantanmen — a spicy Sichuan-inspired dish of pork, chili peppers, and chili oil.

[How to Cook]  For One Serving

In a large pot, bring 2 liters of water to a boil for each noodle packet.
(2)
Dissolve the included soup base in approximately 270 ml of hot water and prepare it in a bowl beforehand.
(3)
Once the water is boiling, add the noodles and gently loosen them. Boil on high heat for 30 seconds, then reduce to medium heat and cook for about 1 minute and 20 seconds.

Once the noodles are cooked, drain them well. Add the prepared hot soup to a bowl, then add the noodles.
(5)
Add your preferred toppings (meat soboro, etc.) and enjoy. Finally, add the flavored oil included in the packet, stir lightly, and your dish is ready.


[How to Make Meat Soboro for Homemade Nakamuraya Tantan Noodles]

Heat salad oil in a frying pan. Once hot, add the ground pork and grated garlic. Stir and cook over medium heat until the meat is thoroughly cooked.

Add mirin, soy sauce, miso, and sugar. Continue to stir and cook over low heat until most of the liquid evaporates.
*Note: If you mix the miso with mirin and soy sauce beforehand, it will blend more easily with the meat.

- Grated garlic: A small amount (about 0.5g)
- Salad oil: 1 teaspoon
- Mirin: 2 teaspoons
- Soy sauce: 1 teaspoon
- Miso (red miso): 1 teaspoon
- Sugar: 1 teaspoon
