Established a century ago, Nihon Brewing Industry Co., Ltd. was founded by Dr. Akejiro Togino, a former brewing laboratory engineer at the Ministry of Finance.
As research in soy sauce brewing progressed, there was a growing demand for koji suitable for this purpose. In response to the needs of numerous companies, Marufuku Miso Starter Culture was developed after years of dedicated research.
This starter culture is characterized by its exceptionally high production of saccharifying enzymes, resulting in a miso with a very strong sweetness.
