Several years ago, my wife and I acquired an oak vanilla barrel from the early 20th century. Sealed for a hundred years, the several gallons of original extract had concentrated itself into a half gallon of pure vanilla syrup...as the oak slowly absorbed the alcohol.
Being the owners of a small vanilla farm, we knew very well the rarity and potential of this, once in a lifetime, discovery.
After the barrel was unsealed, we first softened the contents with the addition of a bottle of fine whiskey.
This mixture was filtered Several times and allowed to settle for a year. After which, we then filtered once more and added Puerto Rican rum.
The final outcome is an extract like nothing you have ever experienced...intoxicating vanilla aroma with strong notes of caramel and an amazing hint of oak that is impossible to replicate without a century of barrel aging.
