Alto Shaam CTX4-10EC Combitherm Oven

This is Alto-Shaam countertop flash steam electric combioven designed for efficiency and ease of use.  The oven includes modes for steam, convection, and a combination of the two.  With this combination you are able to roast, steam, bake, and oven fry with speeds up to 70% faster then conventional ovens.  With the standard features there is an integrated catalytic converter, built in cleaning modes, built-in drip tray, two-speed reversing fan, and removable door gasket.  Oven is constructed with a stainless steel exterior, and stainless steel interior cavities.  You will be able to fit up too 10 half sized sheet pans or 5 full-sized hotel pans.  This equates to about 38 liters or just shy of 50 pounds of food.  The unit runs on 208 volts at phase 1.
